Mochi is a popular delicious Japanese dessert.  It is made from short grain glutinous rice.
In Japan, it is traditional pounded with wooden hammers till it's texture changes to a soft consistence.
Speed is of utmost importance to prevent injury in the process.
Then the rice dough is put into a machine that injects the filling and extrudes dough balls.
